This yummy, plantiful veggie pizza recipe is one of my go-to meals. It’s easy, doesn’t take long to cook, and is packed with so much flavor you’ll keep reaching for another slice.
Crispy pizza crust, topped with colorful veggies, with my favorite ooey-gooey dairy-free cheese drizzled on top. Whether you’re vegan, participating in Veganuary, or just trying to incorporate more veggies into your meals, you’ll love this flavorful and nutrient-dense pizza.
There are so many benefits to eating more plants. Lucky for you, this recipe is jam-packed with them. You can use whichever veggies you already have in your fridge or follow my recipe using the ones I did.
Plantiful Veggie Pizza Ingredients
- Cruciferous veggies – Broccoli is rich in vitamins and minerals. Or add cauliflower, cabbage, or brussels sprouts. Cruciferous veggies are a great source of omega-3s and are high in protein.
- Leafy greens – Add organic kale, spinach, or arugula for some extra greens.
- Garlic – Garlic is highly nutritious. It’s high in manganese, Vitamin b6, Vitamin C, fiber, and antioxidants.
- Chickpeas – Chickpeas are an excellent source of high-quality plant-based protein. Use canned chickpeas that have been rinsed off and patted dry.
- Basil – High in fiber and minerals. Using fresh basil instead of dried adds more flavor to the recipe.
- Bell peppers – Bell peppers add color and are exceptionally high in Vitamin C.
- Asparagus – Asparagus contains folate, Vitamin K, and Vitamin A.
- Organic tomato sauce – Heart healthy and an excellent source of Vitamins C, A, and K. Opt for organic tomatoes when possible.
- Olive Oil – Olive oil is high in healthy fats and antioxidants.
- Black olives

- Zucchini or squash
- Mushrooms
- Red onion

Plantiful Veggie Pizza [Healthy + Vegan]

- Organic pizza sauce
- Mini pizza crust
- Miyoko's Creamery Organic Liquid Vegan Pizza Mozzarella
- Olive oil
- Balsamic Vinegar
- Asparagus
- Garlic
- Basil
- Chickpeas
- Bell pepper
- Broccoli
Instructions
- Preheat oven to 450 degrees.
- Begin prepping veggies. Wash and cut up veggies.
- Spread 1 tablespoon of red sauce on each mini pizza crust.
- Add veggies and chickpeas. Drizzle desired amount of vegan cheese over the pizza.
- Cook for 5-10 minutes, or until the crust is golden brown.
- Let cool for 1-2 minutes.
- Drizzle olive oil and balsamic vinegar over the top.
- OPTIONAL: Sprinkle on vegan parmesan cheese or nutritional yeast.
