Plantiful Veggie Pizza [Healthy + Vegan]

Ingredients
  

  • Organic pizza sauce
  • Mini pizza crust
  • Miyoko's Creamery Organic Liquid Vegan Pizza Mozzarella
  • Olive oil
  • Balsamic Vinegar
  • Asparagus
  • Garlic
  • Basil
  • Chickpeas
  • Bell pepper
  • Broccoli

Instructions
 

  • Preheat oven to 450 degrees.
  • Begin prepping veggies. Wash and cut up veggies.
  • Spread 1 tablespoon of red sauce on each mini pizza crust.
  • Add veggies and chickpeas. Drizzle desired amount of vegan cheese over the pizza.
  • Cook for 5-10 minutes, or until the crust is golden brown.
  • Let cool for 1-2 minutes.
  • Drizzle olive oil and balsamic vinegar over the top.
  • OPTIONAL: Sprinkle on vegan parmesan cheese or nutritional yeast.
